Abstract
Potato (Solanum tuberosum) is one of the most important agriculture products which damage soon because of inappropriate storage and processing conditions. Drying process causes to increase the shelf life of potato. In current research, potato slices dried in a parallel flow dryer and its kinetics of drying and shrinkage was studied. The experiments were accomplished in three levels of slices thickness; 3, 6 and 9 mm and three levels of temperature; 50, 60 and 70 c. Air flow was considered as 0.012 m3/s in all tests. Drying rate, moisture reduction, variation of area and roundness of samples were investigated during drying period. Results showed the maximum drying rate has been occurred when temperature was 70 c and thickness was 3 mm. Area and roundness variation was increased while temperature increased and thickness decreased.

Abstract
Wheat is harvested in a short period of time, but it takes several months to be processed and consumed. So wheat flour needs to be stored in suitable condition to retain its good quality for nutrition and industrial uses. On the other hand, exposure of wheat under improper conditions may deteriorate the quality resulting in high economic losses. In this study accelerated ageing of wheat grains was carried out by increasing moisture content (16, 18 and 20%) and keeping the samples in different temperatures (30, 40 and 50°C) for different periods (2, 5 and 8 days).Samples were then milled and physicochemical properties including moisture content, protein, ash, wet gluten, pH and falling number were determined. Response surface methodology with central composite design was applied to minimize total numbers of experimental runs and to determine the significance of the factors.Results showed that increasing storage temperature and time resulted in increasing protein, falling number and ash, while wet gluten, pH and moisture content decrease. By increasing moisture content, wet gluten, protein, ash and falling number decreased while moisture content and pH increased. Optimization using response surface methodology showed that the optimum condition for accelerated ageing of wheat grain contained 16% moisture content, storage temperature of 40.74°C for 2.57 days.

Abstract
In this research, rehydration behavior of dried figs was studied at different temperatures (25, 60, 70, 80, and 90°C). The rehydration kinetic was examined using the four most frequently used empirical models, namely, Weibull, Peleg, first-order, and exponential association models. The Weibull model gave the highest coefficient of determination (R2) and the lowest values of root mean square error (RMSE), sum of squared error (SEE), and chi-square (χ2) was considered the best. In all models examined, the equilibrium moisture content showed statistically significant differences as compared to the rehydration temperature. The temperature dependence of kinetic constants was described in terms of Arrhenius relationship. The average activation energy for the four models was 24.362 kJ mol-1. During the rehydration process hardness of dried figs decreased, which was further confirmed by microscopic evaluation. Scanning electron microscopy (SEM) images of rehydrated figs indicated porous structure proposing the presence of free water.

Abstract
This research is to analyze the effects of Critical Discourse Analysis (CDA) on reading comprehension of Iranian EFL learners. After providing a useful synopsis, this research is to contextualize CDA in two ranges of learning situations and classifies how CDA can shed new perceptions on learning. Detailed systematic measures are included to clarify the procedure of conducting CDA. The participants were 61 male and female M.A. English students of Boroujerd Islamic Azad University, selected on a non- random basis by applying a TOEFL test among over 91 EFL M.A. students considered to be at the same level. Those whose scores on the test were from 224 to 316 with the mean of 273.736 were considered as the participants of this study. They had received instructions on English language for 16 sessions at Boroujerd Islamic Azad University. The participants were native speakers of Farsi. Any word, phrase, or structure can have different possible meanings, which is known as the meaning range. Focusing on the implied meaning of the text, the learners of the second language reach a better understanding of the text and consequently of the second language. The present research shows how seven elements offered by Fairclough's model in critical discourse analysis can affect reading ability of Iranian EFL learners. Also,besides scrutinizing the effect of CDA in EFL learners, the researcher introduces the seven elements of Fairclough's model as well.
